Hummus

Ingredients:
2 cans of garbanzo beans drained
½ cup Tahini
3 table spoons olive oil
1 ½ tea spoon cumin
Juice of 2 lemons
3 cloves of garlic
Salt & pepper to your taste
¼ tea spoon all spice
Preparation:
Combine garlic, olive oil, lemon juice & all the spices, mix in the food processor till you see the garlic is finely chopped. Add the garbanzo beans & Tahini sauce mix till it become a smooth paste
Hint: if you see it a little thick you can add a very little water or lemon juice if you like it a little tangy. ENJOY!!
Chicken Enchiladas
•March 11, 2009 • 2 CommentsI finally figured out how to get all of my family together at the dinner table. Just say it’s “Mexican Night” and oh boy… everyone is home and waiting for dinner!
I didn’t grow up with Mexican food, and am so happy that I was introduced to it when I came to America. My husband Ray took me to my first Mexican restaurant, and it was love at first site. I’m talking about the MEXICAN FOOD of course!!! Here I am, twenty two years later…trying to perfect it and I think I’m almost there… almost.
Below is my recipe for Chicken Enchiladas. I hope you enjoy it as much as my family does… and if you’re looking for a way to get your family together for dinner… just make this recipe and you’ll have a happy dinner table!
Ingredients for green sauce:
1 ½ pound green tomatillos (Peeled)
1 cup water
1 bunch of cilantro chopped
2 table spoon of Olive oil
2 Jalapeno peppers (it depends how spicy you like it less or more)
Juice of 1 lemon
Juice of 2 limes
2 cloves of garlic (minced)
½ onion
½ tea spoon of all spice
½ tea spoon oregano
½ tea spoon black pepper
1 tea spoon of cumin
Salt to taste.
Preparation for green sauce:
Sauté peeled tomatillos for about 10 minutes
Place all ingredients in a blender
Blend it until all ingredients are fine like a purée
Place in a pan cook on low heat for about 30 to 35 minutes covered to thicken.
Ingredients for Enchiladas:
4 large chicken breast (boneless skinless) cooked and shredded
16 -18 corn tortillas (each breast should fill about 4 tortillas)
1 can of black olives
1 pound of cheese (choose from Mozzarella, Monterey Jack or Quesco Fresco)
½ cup sour cream (optional)
Salt to test for chicken
Vegetable oil for frying tortilla
Preparation for enchiladas:
Heat oil; cook the tortillas individually for about 30 seconds each (cook about 15 second on each side) avoid over cooking it so you can wrap it
Let it cool down for about 5 to 10 minutes
Add half of the green sauce over the chicken mix well
Add olives
Place the chicken over the tortilla add some cheese and roll
Line them up close to each other so they stay put.
Add cheese to the top of it
Pre heat oven 375 Fahrenheit, bake for about 10 minutes
Add the remainder of the green sauce and bake for about 20 minutes.
Let it stand for 5 minutes serve worm & ENJOY!
Chicken Chipotle Quesadilla

Ingredients:
Mozzarella cheese
Shredded cooked chicken grilled with onions, garlic & cilantro.
Fresh diced tomatoes
Peppers (red peppers & chipotle peppers)
Butter
Direction
Use ½ tea spoon of butter per 1 quesadilla
In warm skillet & low heat add butter, then place tortilla over it
Add all ingredients, cheese, chicken, tomatoes & peppers
Add the top tortilla
Let it cook very slowly (so the cheese could melt without burning the tortilla)
Flip it to cook on the other side until the cheese melted and the tortilla is crispy
Cut, serve. ENJOY!!
Red Cabbage & Olive Salad

Ingredients:
1 head of red cabbage
Juice of 2 lemons
4 table spoons olive oil
3 cloves of garlic
1 table spoon of vinegar (your favorite one)
½ tea spoon of fresh ground black pepper
1 tea spoon of fresh dry mint
1 can of sliced black olives
1 jar of green olives pitted
2 tomatoes
Salt to taste
Preparation:
Chop the cabbage semi finely (like coleslaw)
Add all ingredients mix and Serve

Vinaigrette & Basil Potato Salad

Ingredients:
6 large potatoes -cooked
2 large tomatoes -diced
1 bunch green onions
1 bunch of parsley- finally chopped
Juice of 2 lemons
1 table spoon vinegar (your favorite one)
½ cup olive oil
½ onion –diced
2 minced garlic
Salt & pepper to your test
½ tea spoon of hot Paprika
Fresh basil
Preparations:
Combine all ingredients, mix & serve worm or cold
Enjoy!!
Chicken With Grilled Onions & Sumac

Hello everyone!
This recipe is easy to prepare and you can prepare the chicken a day in advance if you want too. You can also bake it a couple of hours before your guests arrive. It will still have the flaky crust dough with good texture and you’ll impress your guests with little effort!
Ingredients:
3 pounds of chicken breasts cooked with spices and shredded. 3 Large onions diced seasoned and grilled.
2 eggs for brushing the top of the dough
3 tea spoons of sumac seasoning
1 package of puff pastry dough (or you can make your own dough) about 12 large pieces
A juice of one lemon
4 table spoons of olive oil
Salt to taste
1 tea spoon paprika if you like it spicy you can use hot paprika
½ tea spoon black pepper.
Pickles or peppers for garnish
Preparation:
Combine chopped onions & ½ of the seasoning over the olive oil
Caramelize the onions
Cook the chicken with seasoned water ( I usually cook chicken for most recipes with a couple of Bay leaves, salt , pepper, dash of hot peppers & ½ onions)
Shred all the chicken, add the seasoning
Combine chicken with onions
Mix & Cook for about 5 minutes
Place chicken on the dough
Fold to any shape you prefer
Press tight so chicken stays in
Brush with eggs
I like to be generous with the eggs on top to give it beautiful golden color
Pre -heat oven to 375 Fahrenheit.
Bake about 20 minutes, or until golden color.
Garnish with pickles or peppers. Enjoy!!
You can also use flour tortilla if you don’t wish to use dough or if you don’t have it. Use same exact recipe, place on a tortilla and roll like a small burritos, don’t forget to brush the top with eggs, Bake & enjoy.
